Preparation
  1. Rinse and sort the beans thoroughly under cold water. Remove any debris or damaged beans.
  2. (Optional) Soak the beans for 4 to 8 hours to reduce cooking time.
Cooking
  1. Combine beans and water in a saucepan and bring to a boil.
  2. Reduce heat and simmer gently for 30 to 50 minutes until the color and aroma deepen.
  3. Strain the liquid into a heatproof container using a fine mesh strainer or cheesecloth.
  4. Cool or serve warm and enjoy, adding lemon, ginger, or sweetener to taste.
