- Slice the flank steak thinly against the grain.
- In a bowl, toss the sliced steak with olive oil, salt, pepper, garlic powder, and onion powder until well coated.
- Preheat your air fryer to 400°F (200°C). Place the steak in a single layer in the basket and air fry for about 7 minutes, shaking halfway through.
- In a skillet over medium heat, cook the onions and bell peppers for 5–6 minutes until softened.
- Add the air-fried steak to the skillet with the veggies and stir to combine and heat through.
- Split the hoagie rolls, fill with the steak-veggie mixture, and top with a slice of provolone cheese.
- Place the assembled sandwiches in the air fryer for 3–4 minutes until the cheese is melted and bubbly.
