Ingredients
  

For the crust and filling
  • 1 package refrigerated pie crust Convenient and easy to work with.
  • 2–3 medium apples, peeled and diced Choose a mix of sweet and tart apples for balance.
  • 1/4 cup brown sugar For that deep, caramelized sweetness.
  • 1 teaspoon cinnamon Essential for that warm, inviting flavor.
  • 1 tablespoon lemon juice Brightens the apple flavor.
  • 1 large egg (for egg wash) Gives a golden finish.
  • optional powdered sugar, for dusting For a sweet, finishing touch.

Method
 

Preparation
  1. In a bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Stir until apples are well-coated.
  2. Unroll the pie crusts on a floured surface and cut into circles (about 5-6 inches in diameter).
  3. Place a spoonful of the apple mixture on one half of each circle, leaving a border.
  4. Fold the other half of the crust over the filling and crimp the edges with a fork to seal.
  5. Whisk the egg and brush it over the top of each pie to give it a beautiful golden finish.
Cooking
  1. Set the air fryer to 350°F (175°C) and preheat for 3–5 minutes.
  2. Arrange the hand pies in a single layer in the air fryer basket and cook for 10–12 minutes or until golden brown.
  3. Allow to cool slightly before serving.

Notes

These hand pies can be stored in an airtight container at room temperature for up to 2 days. Freeze uncooked hand pies individually, then transfer to a freezer bag. Cook straight from frozen, adding a few extra minutes to the cooking time.
