Preparation
- In a bowl, combine diced apples, brown sugar, cinnamon, and lemon juice. Stir until apples are well-coated.
- Unroll the pie crusts on a floured surface and cut into circles (about 5-6 inches in diameter).
- Place a spoonful of the apple mixture on one half of each circle, leaving a border.
- Fold the other half of the crust over the filling and crimp the edges with a fork to seal.
- Whisk the egg and brush it over the top of each pie to give it a beautiful golden finish.
Cooking
- Set the air fryer to 350°F (175°C) and preheat for 3–5 minutes.
- Arrange the hand pies in a single layer in the air fryer basket and cook for 10–12 minutes or until golden brown.
- Allow to cool slightly before serving.

Notes
These hand pies can be stored in an airtight container at room temperature for up to 2 days. Freeze uncooked hand pies individually, then transfer to a freezer bag. Cook straight from frozen, adding a few extra minutes to the cooking time.
