- Preheat your air fryer to 320°F (160°C) while you prepare the muffins.
- In a mixing bowl, mash the ripe bananas until smooth.
- Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Mix until well combined.
- In a separate bowl, whisk together baking soda, salt, and flour.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing!
- Place silicone or paper muffin liners in your air fryer basket and fill each cup about 3/4 full with the batter.
- Cook in the air fryer for about 12-15 minutes or until a toothpick inserted in the center comes out clean. Let cool for a few minutes before serving!
