Ingredients

Wet Ingredients
  • 2 pieces ripe bananas The riper, the better for sweetness!
  • 1/3 cup melted butter Coconut oil can be used for a dairy-free version.
  • 1/2 cup sugar Adjust to taste; brown sugar can be used for deeper flavor.
  • 1 piece egg Can substitute with a flax egg for a vegan option.
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour Whole wheat flour can be used for a healthier twist.

Method

Preparation
  1. Preheat your air fryer to 320°F (160°C) while you prepare the muffins.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Add melted butter, sugar, egg, and vanilla extract to the mashed bananas. Mix until well combined.
  4. In a separate bowl, whisk together baking soda, salt, and flour.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid over-mixing!
  6. Place silicone or paper muffin liners in your air fryer basket and fill each cup about 3/4 full with the batter.
  7. Cook in the air fryer for about 12-15 minutes or until a toothpick inserted in the center comes out clean. Let cool for a few minutes before serving!
