Ingredients
  

Vegetables
  • 2 cups broccoli florets Fresh or frozen; fresh gives the best texture.
  • 2 cups carrots, sliced Baby carrots or regular, cut into bite-sized pieces.
Seasoning
  • 2 tablespoons olive oil For roasting the vegetables.
  • 1 teaspoon garlic powder For added flavor.

Optional Toppings
  • to taste Parmesan cheese For extra flavor.
  • to taste lemon juice For brightening the dish.

Method
 

Preparation
  1. Wash and cut the broccoli into bite-sized florets and slice the carrots into thin rounds.
  2. In a large bowl, combine the broccoli and carrots. Drizzle with olive oil, garlic powder, salt, and pepper. Toss until everything is well coated.
Cooking
  1. Preheat your air fryer to 400°F (200°C) for about 3 minutes.
  2. Place the seasoned broccoli and carrots in the air fryer basket in a single layer. You may need to do this in batches.
  3. Air fry for 10-12 minutes, shaking the basket halfway through to ensure even cooking.
  4. Remove the veggies from the fryer and add optional toppings like grated Parmesan cheese or a squeeze of lemon juice.
