Preparation
  1. Preheat your air fryer to 320°F (160°C) for about 3-5 minutes.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, and nutmeg until combined.
  3. In another larger bowl, mix the oil and sugar until smooth. Add the eggs one at a time, beating well after each addition.
  4. Stir in the grated carrots until well mixed.
  5. Gradually add the dry mixture to the carrot mixture, folding gently until well combined. If desired, fold in walnuts or pecans.
  6. Grease an air fryer-safe baking pan (7-inch is recommended), and pour the batter in evenly.
Cooking
  1. Place the pan in the air fryer basket and bake at 320°F for about 25-30 minutes, or until a toothpick inserted in the center comes out clean. Cool before serving.
