Ingredients
  

For the filling
  • 2 cups cooked chicken (shredded or diced) Rotisserie chicken works great.
  • 1 cup shredded cheese (Mexican blend or cheddar)
  • ½ cup black beans (drained and rinsed)
  • 1 tsp taco seasoning Or to taste.
For assembly
  • 4 large flour tortillas Soft and pliable.
  • 2 tbsp olive oil For brushing.

Method
 

Preparation
  1. In a bowl, mix together the cooked chicken, cheese, black beans, and taco seasoning until combined.
  2. Lay a tortilla flat, add a generous amount of filling in the center, and fold in the sides. Roll it up tightly, ensuring the filling is secure.
  3. Set your air fryer to 375°F (190°C) and allow it to preheat for about 5 minutes.
  4. Lightly brush each chimichanga with olive oil on all sides to help them achieve that perfect golden brown color.
Cooking
  1. Place chimichangas seam-side down in the air fryer basket in a single layer. Cook for approximately 10-12 minutes, flipping them halfway through for even crispiness.
  2. Check for doneness; they should be golden brown and crispy on the outside. If you prefer extra crunch, add a couple more minutes.
Serving
  1. Remove from the air fryer, let them cool slightly, and serve hot with your favorite toppings.
