  • 1 lb ground beef (or turkey) Can use turkey for a leaner option
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 2 cups frozen diced potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 packet taco seasoning
  • ½ cup diced bell peppers (any color)
  • ½ cup diced onion
  • Salt and pepper to taste
  • Optional: sliced jalapeños for a kick

Method
 

Preparation
  1. Preheat the Air Fryer to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef with diced onions and bell peppers until cooked through. Drain excess fat.
  3. In a large bowl, combine the cooked meat, black beans, corn, diced potatoes, taco seasoning, and salt and pepper. Stir until well mixed.
  4. Pour the mixture into the air fryer basket and spread it evenly.
Cooking
  1. Air fry at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through for even cooking.
  2. Sprinkle the shredded cheese on top and return to the air fryer for an additional 3-5 minutes until the cheese is melted and bubbly.
  3. Let the casserole cool for a few minutes, then serve hot and enjoy!

Notes
