  • 2 cups cooked rice (preferably day-old for best texture)
  • 1 cup mixed vegetables (frozen or fresh, like peas, carrots, and corn)
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil (or olive oil)
  • 1 clove garlic, minced
  • 1-2 pieces green onions, chopped (for garnish) Optional garnish
  • 1 cup optional protein (chicken, shrimp, or tofu) Use whatever protein you have on hand

Method
 

Preparation
  1. If using fresh vegetables or cooked proteins, chop them into bite-sized pieces.
  2. In a large bowl, combine the cooked rice, mixed vegetables, soy sauce, sesame oil, minced garlic, and any optional protein. Stir until well combined.
Cooking
  1. Set your air fryer to 350°F (175°C) and let it preheat for about 5 minutes.
  2. Pour the rice mixture into the air fryer basket, spreading it out evenly.
  3. Air fry for 10-12 minutes, shaking the basket halfway through to promote even cooking.
  4. Once done, check for doneness and adjust the cooking time if necessary. Stir in chopped green onions.
  5. Serve hot, garnished with additional chopped green onions if desired.
