Ingredients
  

For the Chicken
  • 1 lb chicken breast, thinly sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
For the Bowls
  • 2 cups cooked quinoa or rice Use quinoa for a gluten-free option.
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ½ cup tzatziki sauce (store-bought or homemade)

Method
 

Preparation
  1. In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the chicken to the bowl and let it marinate for 15-20 minutes.
Cooking
  1. Preheat your air fryer to 375°F (190°C).
  2. Place the marinated chicken slices in the air fryer basket in a single layer.
  3. Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Assembling the Bowls
  1. While the chicken is cooking, prepare bowls with cooked quinoa or rice as the base.
  2. Once the chicken is done, slice it and place it on top of the quinoa/rice.
  3. Add cherry tomatoes, cucumber, red onion, and olives.
  4. Top each bowl with a generous dollop of tzatziki sauce.
  5. Garnish with additional herbs or a sprinkle of feta cheese if desired.

Notes
