- In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Add the chicken to the bowl and let it marinate for 15-20 minutes.
Cooking
- Preheat your air fryer to 375°F (190°C).
- Place the marinated chicken slices in the air fryer basket in a single layer.
- Cook for 10-12 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
Assembling the Bowls
- While the chicken is cooking, prepare bowls with cooked quinoa or rice as the base.
- Once the chicken is done, slice it and place it on top of the quinoa/rice.
- Add cherry tomatoes, cucumber, red onion, and olives.
- Top each bowl with a generous dollop of tzatziki sauce.
- Garnish with additional herbs or a sprinkle of feta cheese if desired.
