- In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
- In another bowl, whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice until well blended.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Preheat the air fryer to 320°F (160°C) while you fill the muffin liners.
- Line a muffin tin with liners and pour the batter into each cup, filling them about 2/3 full.
- Gently place the muffin tin in the air fryer basket. Air fry for about 12-15 minutes, or until a toothpick inserted comes out clean.
- Remove the muffins from the air fryer and let them cool on a wire rack before serving.
