Ingredients
  

Dry Ingredients
  • 1 cup all-purpose flour can substitute with whole wheat flour
  • 1/2 cup granulated sugar or coconut sugar for a healthier option
  • 2 tsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
Wet Ingredients
  • 1/2 cup milk dairy or non-dairy
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 large egg
  • Zest of 1 lemon for added flavor
  • 2 tbsp fresh lemon juice

Method
 

Preparation
  1. In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt.
  2. In another bowl, whisk together the milk, vegetable oil, egg, lemon zest, and lemon juice until well blended.
  3. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  4. Preheat the air fryer to 320°F (160°C) while you fill the muffin liners.
  5. Line a muffin tin with liners and pour the batter into each cup, filling them about 2/3 full.
  6. Gently place the muffin tin in the air fryer basket. Air fry for about 12-15 minutes, or until a toothpick inserted comes out clean.
  7. Remove the muffins from the air fryer and let them cool on a wire rack before serving.

Notes
