Preparation
- Set up a clean, flat surface for rolling the egg rolls.
- In a bowl, combine shredded mozzarella, chopped pepperoni, and a pinch of Italian seasoning.
Assembly
- Place an egg roll wrapper on the surface, point facing you.
- Spoon about 2 tablespoons of the filling onto the wrapper.
- Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly (like a burrito).
- Use a little water along the edges to seal them securely.
Cooking
- Preheat the air fryer to 400°F (200°C).
- Lightly spray the egg rolls with cooking spray for crispiness.
- Place the egg rolls in the air fryer basket (don’t overcrowd!) and cook for about 8-10 minutes or until golden brown and crispy. Flip halfway through for even cooking.
