- Spread the mixture in a single layer in the air fryer basket. You might need to do this in batches if your air fryer is small.
- Air fry for 8-10 minutes, shaking halfway through for even cooking. The shrimp should be opaque and cooked through.
Assembly
- While the shrimp is cooking, warm your tortillas in a pan or microwave.
- Fill each tortilla with the shrimp and veggie mixture.
- Garnish with your favorite toppings and squeeze some lime over for extra zest!
