Ingredients
  

Main Ingredients
  • 1 lb shrimp, peeled and deveined (fresh or thawed) Use medium or large shrimp for best flavor.
  • 1 bell pepper, sliced (any color you like)
  • 1 onion, sliced (yellow or red for sweetness)
  • 2 tbsp olive oil
  • 1 tsp chili powder Adjust to taste.
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper, to taste
  • Tortillas for serving flour or corn
  • Optional toppings: avocado, salsa, cheese, sour cream, lime wedges

Method
 

Preparation
  1. Preheat your air fryer to 380°F (193°C) for about 5 minutes.
  2. In a mixing bowl, combine the shrimp, bell pepper, onion, olive oil, and spices. Toss everything together until well-coated.
Cooking
  1. Spread the mixture in a single layer in the air fryer basket. You might need to do this in batches if your air fryer is small.
  2. Air fry for 8-10 minutes, shaking halfway through for even cooking. The shrimp should be opaque and cooked through.
Assembly
  1. While the shrimp is cooking, warm your tortillas in a pan or microwave.
  2. Fill each tortilla with the shrimp and veggie mixture.
  3. Garnish with your favorite toppings and squeeze some lime over for extra zest!
