- Preheat your air fryer to 320°F (160°C).
- In a large bowl, cream the softened butter and 1/2 cup of powdered sugar until fluffy.
- Add the vanilla and mix well.
- Gradually add the flour, chopped nuts, and salt to the butter mixture until fully combined.
- Roll the dough into small balls (about 1 inch in diameter) and place them on a parchment-lined air fryer basket, giving enough space in between.
- Cook in batches if needed, for 10-12 minutes until the bottoms are lightly golden.
- Let the cookies cool for a few minutes, then roll them in the remaining powdered sugar until coated.
- Serve them warm or at room temperature with a cup of tea or coffee!
