Ingredients

  • 2 medium squash (zucchini or yellow squash)
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • grated Parmesan cheese (optional, for topping)

Equipment

  • air fryer
  • mixing bowl
  • serving dish
  • cutting board
  • sharp knife

Method

  1. Wash and dry the squash, then slice them into ½-inch thick rounds.
  2. In a large bowl, combine the olive oil, garlic powder, onion powder, salt, and pepper. Add the squash rounds and toss until evenly coated.
  3. Set your air fryer to 375°F (190°C) and preheat for about 3–5 minutes.
  4. Place the seasoned squash rounds in a single layer in the air fryer basket. Cook in batches if needed to avoid overcrowding.
  5. Cook for 10–12 minutes, shaking the basket halfway through. Look for a golden-brown color and tender texture.
  6. If using, sprinkle grated Parmesan cheese on top during the last 2 minutes of cooking.
  7. Remove from air fryer and transfer to a serving dish. Serve hot and enjoy!

Notes

Try topping with Parmesan cheese in the last 2 minutes of cooking for extra flavor. You can swap olive oil for avocado oil, and mix up the spices to your liking — cayenne, paprika, or thyme all work great. Store leftovers in an airtight container in the fridge for up to 3 days.
