- In a mixing bowl, combine the softened cream cheese, sugar, and vanilla extract until smooth and creamy.
- Gently fold in the diced strawberries, ensuring they are well distributed throughout the mixture.
- Place a wonton wrapper on a clean surface. Add about a tablespoon of the cheesecake mixture to the center of the wrapper.
- Brush the edges with the egg wash, fold the wrapper over the filling diagonally to create a triangle, and press to seal. Repeat with remaining wrappers and filling.
- Set your air fryer to 350°F (175°C) for about 5 minutes while you prepare the wontons.
- Arrange the wontons in a single layer in the air fryer basket (you may need to do this in batches). Spray lightly with cooking spray if desired.
- Cook for 8-10 minutes until golden brown and crispy.
- Remove from the air fryer, allow to cool slightly, and dust with powdered sugar before serving.
