Ingredients
  

For the Stuffed Peppers
  • 4 medium bell peppers (your choice of color)
  • 1 lb ground meat (beef, turkey, or a meat substitute)
  • 1 cup cooked rice (white, brown, or quinoa)
  • 1 small onion, diced
  • 1 can diced tomatoes (14.5 oz), drained
  • 1-2 tsp garlic powder (to taste)
  • 1-2 tsp Italian seasoning (or your preferred spices)
  • Salt and pepper (to taste)
  • 1 cup shredded cheese (optional, for topping)

Method
 

Preparation
  1. Cut the tops off the bell peppers and remove the seeds. Set aside.
  2. In a large bowl, combine ground meat, cooked rice, diced onion, drained tomatoes, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.
  3. Fill each pepper generously with the meat and rice mixture. Pack it in, but don’t overfill!
Cooking
  1. Set your air fryer to 370°F (190°C) and preheat for about 5 minutes.
  2. Place the stuffed peppers in the air fryer basket. Cook for 12-15 minutes, or until the peppers are tender and the meat is cooked through.
  3. If using cheese, sprinkle it on top and cook for an additional 3-5 minutes until melted.
Serving
  1. Let the stuffed peppers cool for a couple of minutes before serving. Enjoy!
