Ingredients
  

For the Casserole
  • 1 lb ground beef (or turkey for a leaner option)
  • 1 packet taco seasoning (sugar-free for keto)
  • 1 cup cauliflower rice (fresh or frozen)
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (any color)
  • 1/2 cup sour cream

Method
 

Preparation
  1. Preheat your air fryer to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat until cooked through, about 5-7 minutes. Drain excess fat.
  3. Stir in the taco seasoning and cauliflower rice. Cook for an additional 3-5 minutes until combined and heated through.
  4. In a suitable air fryer-safe dish, layer the meat mixture with diced bell peppers and top with shredded cheddar cheese.
Cooking
  1. Place the dish in the preheated air fryer basket and cook for 10-12 minutes, or until the cheese is melted and bubbly.
Serving
  1. Carefully remove the dish and let it cool for a minute. Top with sour cream and any optional toppings you prefer.
  2. Divide into portions and serve warm, savoring the comforting flavors!
