Preparation
- Preheat your air fryer to 350°F (175°C).
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Stir in the taco seasoning, chopped bell peppers, and diced tomatoes. Cook for an additional 3-4 minutes until the peppers soften.
Assembly and Cooking
- In a greased air fryer pan, layer the cooked beef mixture, cauliflower rice, and half of the cheese.
- Sprinkle the remaining cheese over the top.
- Cook in the air fryer for 15-20 minutes until the cheese is bubbly and golden.
- Remove from the air fryer, add your favorite toppings, and serve.

Store leftovers in an airtight container in the fridge for 3-4 days. For freezing, assemble but don’t cook; wrap tightly and freeze for up to 3 months. Reheat in the air fryer at 350°F for about 5-7 minutes until heated through.
