Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup fruit jam or preserves

Method
 

  1. Preheat your air fryer to 320°F (160°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until smooth.
  3. In another bowl, whisk together the flour, salt, and baking powder. Gradually add this to the butter mixture, mixing until a dough forms.
  4. Scoop out tablespoon-sized portions of dough, roll them into balls, and place them on the air fryer basket lined with parchment paper.
  5. With your thumb or the back of a spoon, gently press down in the center of each cookie to create an indent.
  6. Fill each thumbprint with about a teaspoon of fruit jam.
  7. Cook in the air fryer for about 8–10 minutes or until the edges are lightly golden. Allow them to cool slightly before transferring to a wire rack.

Notes

Store leftover cookies in an airtight container in the fridge for up to a week. Freeze unbaked cookie dough balls for up to 3 months. Reheat in the air fryer for 2–3 minutes to restore softness.
