  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract Adjust according to taste.
Mix Ins
  • 1 cup white chocolate chips
  • 1/4 cup crushed peppermint candies Optional, for extra crunch.

Method
 

Preparation
  1. Preheat your air fryer to 320°F (160°C).
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar until smooth and creamy (about 2-3 minutes).
  4. Mix in the egg, vanilla extract, and peppermint extract until well combined.
  5. Gradually fold in the flour mixture until just combined.
  6. Stir in the white chocolate chips and crushed peppermint candies if using.
  7. Using a cookie scoop or your hands, form small balls of dough and place them in the air fryer basket. Ensure they are spaced apart for even cooking.
Cooking
  1. Cook the cookies for 8-10 minutes, or until the edges are lightly golden.
  2. Allow them to cool in the basket for a few minutes before transferring to a cooling rack.
