Ingredients

For the Cake:
  • 2 cups all-purpose flour
  • 2 cups unsweetened applesauce
  • 1 cup granulated sugar
  • ½ cup butter softened
  • 2 large eggs
  • 1 teaspoon baking soda
  • teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup raisins optional
  • 1 cup chopped walnuts or pecans optional
For the Optional Caramel Glaze:
  • ½ cup brown sugar
  • ¼ cup butter
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Method

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan or bundt pan.
  2. In a medium bowl, whisk flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. Cream butter and sugar in a large bowl until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating after each addition. Stir in applesauce.
  5. Fold in dry ingredients just until combined. Add raisins and nuts if using.
  6. Pour batter into prepared pan. Bake 45-50 minutes, until a toothpick comes out clean.
  7. For glaze: Combine brown sugar, butter, and milk in a saucepan. Boil for 2 minutes, remove from heat, and stir in vanilla.
  8. Cool cake 15 minutes. If using, pour warm glaze over cake while slightly warm.

Notes

Use whole wheat flour for extra fiber. Applesauce provides natural moisture—perfect for lower-fat baking. Let cake cool fully before slicing for best texture.
