Preparation
  1. Preheat your oven to 350 degrees F (175 degrees C) and grease a loaf pan.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, allspice, ginger, and nutmeg until well combined.
  3. In a separate bowl, mix together the vegetable oil (or avocado oil), unsweetened applesauce, granulated sugar, brown sugar, eggs, and vanilla extract until the mixture is smooth.
  4. Gradually combine the wet ingredients with the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the bread tender.
  5. In a small bowl, toss the peeled and chopped apples with the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon. Fold these apples into the batter gently.
  6. Spread the batter evenly into the prepared loaf pan.
Baking
  1. Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted into the center comes out clean. The top should be golden and set.
