Preparation
- Preheat your oven to 350 degrees F (175 degrees C) and grease a loaf pan.
- In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, ground cinnamon, allspice, ginger, and nutmeg until well combined.
- In a separate bowl, mix together the vegetable oil (or avocado oil), unsweetened applesauce, granulated sugar, brown sugar, eggs, and vanilla extract until the mixture is smooth.
- Gradually combine the wet ingredients with the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the bread tender.
- In a small bowl, toss the peeled and chopped apples with the remaining 1 tablespoon of granulated sugar and 1/8 teaspoon of cinnamon. Fold these apples into the batter gently.
- Spread the batter evenly into the prepared loaf pan.
Baking
- Bake in the preheated oven for 50 to 60 minutes or until a toothpick inserted into the center comes out clean. The top should be golden and set.
- Allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
