Preparation
- Preheat the oven to 375°F (190°C).
- Lightly grease an 8-inch square baking dish with cooking spray or olive oil.
- In a mixing bowl, whisk together the eggs and milk until well combined and frothy.
- Stir in the cottage cheese, then add the shredded cheese, salt, and pepper. If using vegetables, fold in gently.
Baking
- Pour the mixture into the prepared dish and spread it evenly.
- Bake in the preheated oven for about 20–25 minutes, or until the eggs are set and the top is lightly golden.
- Check for doneness at the 20-minute mark by inserting a toothpick into the center; it should come out clean.
- If not done, continue baking for another 5 minutes.
Serving
- Allow to cool for a few minutes before slicing and serving warm.
- Consider topping with herbs or salsa for added flavor.
