Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Lightly grease an 8-inch square baking dish with cooking spray or olive oil.
  3. In a mixing bowl, whisk together the eggs and milk until well combined and frothy.
  4. Stir in the cottage cheese, then add the shredded cheese, salt, and pepper. If using vegetables, fold in gently.
Baking
  1. Pour the mixture into the prepared dish and spread it evenly.
  2. Bake in the preheated oven for about 20–25 minutes, or until the eggs are set and the top is lightly golden.
  3. Check for doneness at the 20-minute mark by inserting a toothpick into the center; it should come out clean.
  4. If not done, continue baking for another 5 minutes.
Serving
