- Sprinkle 1 to 2 tablespoons of unflavored gelatin powder evenly over 1/2 cup cold water in a small bowl. Let it sit for 2 to 5 minutes to hydrate.
- Pour 1/2 cup very hot water over the bloomed gelatin and stir until completely dissolved, about 30 to 60 seconds.
- Stir in low-calorie flavored liquid or extract, and add unflavored collagen or protein powder if using. Mix until smooth.
- Allow the mixture to cool for a minute or two so it is not steaming hot, but still pourable.
- Pour the mixture into molds, a shallow dish, or a small container, then refrigerate for 30 to 60 minutes until fully set.
- Cut into small portions and serve cold.

Store gelatin refrigerated in a covered container for up to 5 days. Do not freeze as the texture may become rubbery.
