  • 1 to 2 tablespoons unflavored gelatin powder For structure and the classic jiggly texture.
  • 1/2 cup cold water Used to bloom the gelatin.
  • 1/2 cup very hot water To dissolve the bloomed gelatin.
  • 1/2 cup low-calorie flavored liquid or a teaspoon of extract Optional for adding flavor.
  • 1 scoop unflavored collagen or protein powder Optional, to boost protein.
  • to taste Stevia or other low-calorie sweetener Optional to adjust sweetness.

Method
 

Preparation
  1. Sprinkle 1 to 2 tablespoons of unflavored gelatin powder evenly over 1/2 cup cold water in a small bowl. Let it sit for 2 to 5 minutes to hydrate.
  2. Pour 1/2 cup very hot water over the bloomed gelatin and stir until completely dissolved, about 30 to 60 seconds.
  3. Stir in low-calorie flavored liquid or extract, and add unflavored collagen or protein powder if using. Mix until smooth.
  4. Allow the mixture to cool for a minute or two so it is not steaming hot, but still pourable.
  5. Pour the mixture into molds, a shallow dish, or a small container, then refrigerate for 30 to 60 minutes until fully set.
  6. Cut into small portions and serve cold.
