For the Jello Fluff
  • 1 envelope sugar-free gelatin mix (flavored or unflavored) Choose a flavor you enjoy or use unflavored for a neutral base.
  • 1/2 cup boiling water Hot water dissolves the gelatin quickly so it sets properly.
  • 1/2 cup cold water or ice Cooling the mixture prevents cooking the dairy and helps create a smooth texture.
  • 3/4 cup low-fat Greek yogurt or blended cottage cheese Blend cottage cheese until smooth if you prefer its mild flavor.
  • 1/2 cup sugar-free whipped topping Adds lightness and a fluffy mouthfeel while keeping calories and sugar low.
  • a few drops vanilla or fruit extract (optional) Brightens flavor without adding sugar.

Method
 

Preparation
  1. In a heatproof bowl, dissolve the gelatin mix in the boiling water by stirring for 30 to 60 seconds until fully dissolved.
  2. Add the cold water or ice to cool the mixture to lukewarm.
  3. In a separate bowl, whisk the Greek yogurt or blended cottage cheese until smooth.
  4. Gently fold the cooled gelatin into the creamy base until homogenous.
  5. Carefully fold in the sugar-free whipped topping until airy.
  6. Spoon the mixture into small ramekins and refrigerate for at least 1.5 to 2 hours until set.
  7. Serve chilled, garnished with fresh berries or syrup, if desired.

Notes
