Preparation
- In a medium bowl, combine the shredded chicken with the BBQ sauce ensuring all chicken is evenly coated.
- Pour olive oil into a large skillet over medium heat and let it heat up until shimmering.
Cooking
- Take one tortilla and sprinkle half of it with shredded cheese. Top it with some BBQ chicken mixture and more cheese before folding over.
- Place the folded tortilla into the hot skillet. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
- Remove the cooked quesadilla and keep it warm. Repeat with the remaining tortillas and filling.
Serving
- Slice each quesadilla into wedges and serve warm with optional toppings.
