  • 2 cups shredded cooked chicken Use rotisserie or leftover chicken.
  • 1/2 cup BBQ sauce Choose your favorite type.
  • 1 cup shredded cheese (cheddar or a blend) For melting quality.
  • 4 large flour tortillas Soft yet sturdy for holding ingredients.
  • 1 tablespoon olive oil For cooking until golden.
Optional Toppings
  • diced tomatoes For added freshness.
  • sliced jalapeños For a spicy kick.
  • fresh cilantro To enhance color and flavor.

Method
 

Preparation
  1. In a medium bowl, combine the shredded chicken with the BBQ sauce ensuring all chicken is evenly coated.
  2. Pour olive oil into a large skillet over medium heat and let it heat up until shimmering.
Cooking
  1. Take one tortilla and sprinkle half of it with shredded cheese. Top it with some BBQ chicken mixture and more cheese before folding over.
  2. Place the folded tortilla into the hot skillet. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes.
  3. Remove the cooked quesadilla and keep it warm. Repeat with the remaining tortillas and filling.
Serving
  1. Slice each quesadilla into wedges and serve warm with optional toppings.
