Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
- In a large bowl, cream together the softened butter and brown sugar until fluffy, about 2-3 minutes.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined.
Baking
- On a lightly floured surface, roll out half of the dough to about ¼ inch thickness. Cut out shapes using a cookie cutter or knife.
- Spoon a generous amount of the brown sugar cinnamon filling onto the centers of the cutouts, then top with another cookie cutout and gently press the edges to seal.
- Bake in the preheated oven for 12-15 minutes until cookies are lightly golden around the edges.
