- In a large pot of boiling salted water, add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes. Drain in a colander.
- While the pasta is boiling, heat a large skillet over medium heat and add 2 tablespoons of olive oil. Add sliced Cajun smoked sausage and cook for about 5-7 minutes until browned.
- Reduce heat to low, add heavy cream to the skillet with sausage and allow it to simmer for about 3-5 minutes.
- Mix in garlic powder, Cajun seasoning, salt, and pepper. Simmer for an additional 2-3 minutes.
- Combine cooked fettuccine with the sauce, tossing until coated. Add reserved pasta water if the sauce is too thick.
- Gradually sprinkle in Parmesan cheese while tossing, until well combined.
- Garnish with freshly chopped parsley and serve immediately.
