  • 8 oz fettuccine pasta Can substitute with whole grain or gluten-free pasta.
  • 1 lb Cajun smoked sausage Can also use andouille or kielbasa.
Sauce Ingredients
  • 2 tbsp olive oil For sautéing the sausage.
  • 2 cups heavy cream Can substitute with half and half for a lighter sauce.
  • 1 cup grated Parmesan cheese For cheesy flavor.
  • 1 tsp garlic powder Fresh garlic can be used instead.
  • 1 tsp Cajun seasoning Adjust based on spice preference.
  • to taste Salt and pepper For balancing flavors.
  • fresh parsley for garnish fresh parsley Adds color and brightness.

Method
 

Preparation
  1. In a large pot of boiling salted water, add the fettuccine and cook according to package instructions until al dente, usually about 8-10 minutes. Drain in a colander.
  2. While the pasta is boiling, heat a large skillet over medium heat and add 2 tablespoons of olive oil. Add sliced Cajun smoked sausage and cook for about 5-7 minutes until browned.
  3. Reduce heat to low, add heavy cream to the skillet with sausage and allow it to simmer for about 3-5 minutes.
  4. Mix in garlic powder, Cajun seasoning, salt, and pepper. Simmer for an additional 2-3 minutes.
  5. Combine cooked fettuccine with the sauce, tossing until coated. Add reserved pasta water if the sauce is too thick.
  6. Gradually sprinkle in Parmesan cheese while tossing, until well combined.
  7. Garnish with freshly chopped parsley and serve immediately.
