Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture firmly into the bottom of a greased 9x9-inch baking pan.
  3. Bake crust for 8-10 minutes, until lightly golden.
  4. In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then eggs, incorporating one at a time. Finally, blend in vanilla extract.
  5. In another bowl, toss diced apples with cinnamon and brown sugar.
Baking
  1. Pour cheesecake filling over pre-baked crust. Spoon apple mixture on top, distributing evenly.
  2. Bake for 25-30 minutes, until cheesecake is set but still slightly jiggly in the center.
Cooling and Serving
  1. Cool in the pan for 20 minutes, then refrigerate for at least 2 hours.
  2. Before serving, drizzle with caramel sauce and slice into bars.
