Preparation
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press mixture firmly into the bottom of a greased 9x9-inch baking pan.
- Bake crust for 8-10 minutes, until lightly golden.
- In a large bowl, beat softened cream cheese until smooth. Gradually mix in sugar, then eggs, incorporating one at a time. Finally, blend in vanilla extract.
- In another bowl, toss diced apples with cinnamon and brown sugar.
Baking
- Pour cheesecake filling over pre-baked crust. Spoon apple mixture on top, distributing evenly.
- Bake for 25-30 minutes, until cheesecake is set but still slightly jiggly in the center.
Cooling and Serving
- Cool in the pan for 20 minutes, then refrigerate for at least 2 hours.
- Before serving, drizzle with caramel sauce and slice into bars.
