Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cardamom.
- In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy—about 2-3 minutes.
- Add the egg and vanilla to the butter mixture, and continue to beat until well combined.
- Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined.
- For best results, refrigerate the dough for at least 30 minutes.
- Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a lined baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes, until the edges are lightly golden.
