Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, and cardamom.
  3. In a large mixing bowl, beat the softened butter and granulated sugar with an electric mixer until light and fluffy—about 2-3 minutes.
  4. Add the egg and vanilla to the butter mixture, and continue to beat until well combined.
  5. Gradually add the dry ingredient mixture to the wet mixture, mixing on low speed until just combined.
  6. For best results, refrigerate the dough for at least 30 minutes.
  7. Scoop tablespoon-sized portions of dough and roll them into balls. Place them on a lined baking sheet, spacing them 2 inches apart.
  8. Bake for 10-12 minutes, until the edges are lightly golden.
