Preparation
- Preheat your oven to 375°F (190°C).
- Roll out the puff pastry on a lightly floured surface and cut it into small squares, about 4-5 inches each.
- In a medium bowl, combine the softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth and creamy.
- Place a generous tablespoon of the cheese mixture in the center of each puff pastry square. Fold the corners to the center, pinching them together to seal.
- Brush the tops lightly with beaten egg.
Baking
- Place the filled pastry squares on a baking sheet lined with parchment paper and bake for 20-25 minutes or until puffed and golden brown.
- Allow the pastries to cool slightly, then sprinkle with powdered sugar before serving.
