Ingredients
  

  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon pure vanilla extract
  • 1/4 cup sour cream
  • 2 tablespoons all-purpose flour
  • Pinch of salt
  • 6 large flour tortillas 8-inch
  • 2 cups vegetable oil for frying or cooking spray for baking
  • 1/2 cup melted butter
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon nutmeg optional
  • Fresh strawberries
  • Chocolate or caramel sauce
  • Whipped cream
  • Mint leaves

Method
 

  1. Beat cream cheese until smooth. Add powdered sugar and beat until combined.
  2. Mix in egg yolk, vanilla, and sour cream. Fold in flour and salt.
  3. Warm tortillas to prevent cracking.
  4. Place 3 tbsp filling in each tortilla, fold and roll tightly. Seal with melted butter.
  5. Mix cinnamon, sugar, and nutmeg for coating.
  6. Fry seam-side down at 350°F for 2-3 mins per side or bake at 400°F for 10-12 mins.
  7. Roll hot chimis in cinnamon sugar. Let cool 3-5 mins before serving.

Notes

For healthier versions, use Neufchâtel cheese, Greek yogurt, and whole wheat tortillas. Air fry instead of deep fry to reduce fat content.
