Method
- Beat cream cheese until smooth. Add powdered sugar and beat until combined.
- Mix in egg yolk, vanilla, and sour cream. Fold in flour and salt.
- Warm tortillas to prevent cracking.
- Place 3 tbsp filling in each tortilla, fold and roll tightly. Seal with melted butter.
- Mix cinnamon, sugar, and nutmeg for coating.
- Fry seam-side down at 350°F for 2-3 mins per side or bake at 400°F for 10-12 mins.
- Roll hot chimis in cinnamon sugar. Let cool 3-5 mins before serving.

Notes
For healthier versions, use Neufchâtel cheese, Greek yogurt, and whole wheat tortillas. Air fry instead of deep fry to reduce fat content.
