Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1 1/4 cups of sugar until the mixture is light and fluffy.
- Add the egg, vanilla extract, and almond extract (if using) to the bowl, and mix until combined.
- Gradually add in the flour, baking soda, baking powder, and salt, mixing until just combined. Avoid overmixing.
- Roll the dough into 1-inch balls. Then, roll each ball in the remaining 1/4 cup of sugar.
- Place the sugar-coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
Baking
- Bake for 10-11 minutes, or until the edges are lightly golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
