  • 1 tablespoon olive oil For cooking and preventing sticking.

Method
 

Prepare the Chicken
  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat.
  2. Add the chicken and cook for about 6-7 minutes on each side until cooked through and golden-brown.
Shred the Chicken
  1. Remove the chicken from the skillet and let it rest, then shred it into bite-sized pieces.
Mash the Avocado
  1. In a bowl, scoop out and mash the avocado with salt, pepper, and optional lime juice.
Assemble the Sandwich
  1. Spread mashed avocado on two slices of bread, layer shredded chicken and cheese, and add any optional toppings.
Toast the Sandwich
  1. Heat the skillet again and toast each side of the sandwich for 3-4 minutes until bread is crispy and cheese is melted.
Serve
  1. Remove from skillet, let cool slightly, then slice and serve hot.
