Preparation
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Heat a skillet over medium heat, adding a bit of olive oil to prevent sticking.
  3. Cook the chicken for about 6-7 minutes on each side or until they reach an internal temperature of 165°F.
  4. Remove from heat and allow to rest for 5 minutes before slicing.
Avocado Preparation
  1. While the chicken is resting, half the avocado, remove the pit, and scoop the flesh into a bowl.
  2. Mash it lightly with a fork; add a pinch of salt or lime juice for a touch of acidity, if desired.
Assembly
  1. Take two slices of bread and spread a generous layer of mashed avocado on one side of each slice.
  2. Place sliced chicken on top of the avocado and sprinkle cheese on top of the chicken.
Cooking
  1. Heat a clean skillet over medium heat.
  2. Place the assembled sandwich in the skillet and press down gently with a spatula for even toasting.
  3. Cook for about 4 to 5 minutes until the bread is golden brown. Carefully flip and cook the other side for another 4 to 5 minutes until the cheese melts.
