- In a large mixing bowl, combine the rolled oats, peanut butter, honey, dark chocolate chips, vanilla extract, and a pinch of salt.
- Use a spatula or your hands to mix well until everything is thoroughly combined.
- The mixture should be sticky and hold together when pressed. If too dry, add more honey or peanut butter; if too sticky, add more oats.
- Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
- Once chilled, take small portions of the mixture and roll them into bite-sized balls, about 1-inch in diameter.
- Place the formed energy bites on a parchment-lined tray and return them to the fridge for another 10 minutes to firm up.
- Enjoy immediately or store in an airtight container.
