Ingredients

For the Roll Ups
  • 6 slices white or whole wheat bread Soft bread works best; gluten-free options can be used.
  • 4 ounces cream cheese (softened) Consider using flavored varieties for a twist.
  • 2 teaspoons cinnamon Adjust according to taste preferences.
  • 2 tablespoons sugar Regular granulated or brown sugar can be used.
  • 2 large eggs Helps create the classic French toast custard texture.
  • 1/2 cup milk Any milk (dairy or non-dairy) can work.
  • 1 teaspoon vanilla extract Optional but enhances flavor.
  • 1 tablespoon butter For frying, use unsalted butter for best results.

Method

Preparation
  1. Trim the crusts off the bread slices using a sharp knife. Gently flatten each slice with a rolling pin.
  2. In a mixing bowl, combine softened cream cheese, sugar, and 1 teaspoon of cinnamon. Whip until smooth and creamy.
  3. Place about 1 tablespoon of the cream cheese mixture on one end of the flattened bread slice. Roll tightly and repeat with remaining slices.
  4. In another bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon until well combined.
Cooking
  1. Heat a skillet over medium heat and melt about 1 tablespoon of butter.
  2. Dip each roll-up in the egg mixture, allowing excess to drip off, and place seam side down in the hot skillet.
  3. Cook for about 2–3 minutes on each side or until golden brown and crispy.
Serving
  1. Transfer cooked roll-ups to a plate lined with paper towels, dust with powdered sugar or soak in maple syrup, and serve warm with fresh berries.

Notes

Allow leftover roll-ups to cool completely before storing in an airtight container for up to 3 days. To reheat, bake them at 350°F (175°C) for about 10 minutes for best texture.
