Preparation
- Trim the crusts off the bread slices using a sharp knife. Gently flatten each slice with a rolling pin.
- In a mixing bowl, combine softened cream cheese, sugar, and 1 teaspoon of cinnamon. Whip until smooth and creamy.
- Place about 1 tablespoon of the cream cheese mixture on one end of the flattened bread slice. Roll tightly and repeat with remaining slices.
- In another bowl, whisk together the eggs, milk, vanilla extract, and remaining cinnamon until well combined.
Cooking
- Heat a skillet over medium heat and melt about 1 tablespoon of butter.
- Dip each roll-up in the egg mixture, allowing excess to drip off, and place seam side down in the hot skillet.
- Cook for about 2–3 minutes on each side or until golden brown and crispy.
Serving
- Transfer cooked roll-ups to a plate lined with paper towels, dust with powdered sugar or soak in maple syrup, and serve warm with fresh berries.
