Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar for about 3-4 minutes until light and fluffy.
- Beat in the eggs one at a time and then add the vanilla extract, mixing well.
- In a separate bowl, whisk together flour, baking soda, ground cinnamon, and a pinch of salt. Gradually add this to the wet mixture until just combined.
- Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
Baking
- Roll out the chilled dough on a floured surface into a rectangle about ¼-inch thick.
- Sprinkle a mixture of brown sugar and cinnamon over the dough, then roll tightly to create a log and slice into ½-inch rounds.
- Place cookie rounds on a parchment-lined baking sheet and bake for 10-12 minutes until edges are lightly golden.
- Allow cookies to cool on a baking sheet before transferring to wire racks.
Icing
- Mix powdered sugar with a bit of milk or water to create icing and drizzle over cooled cookies.
