Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter, granulated sugar, and brown sugar for about 3-4 minutes until light and fluffy.
  3. Beat in the eggs one at a time and then add the vanilla extract, mixing well.
  4. In a separate bowl, whisk together flour, baking soda, ground cinnamon, and a pinch of salt. Gradually add this to the wet mixture until just combined.
  5. Cover the dough with plastic wrap and refrigerate for at least 30 minutes.
Baking
  1. Roll out the chilled dough on a floured surface into a rectangle about ¼-inch thick.
  2. Sprinkle a mixture of brown sugar and cinnamon over the dough, then roll tightly to create a log and slice into ½-inch rounds.
  3. Place cookie rounds on a parchment-lined baking sheet and bake for 10-12 minutes until edges are lightly golden.
  4. Allow cookies to cool on a baking sheet before transferring to wire racks.
Icing
  1. Mix powdered sugar with a bit of milk or water to create icing and drizzle over cooled cookies.
