Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large mixing bowl, beat together room temperature butter, brown sugar, and granulated sugar until creamy and fluffy (about 3 to 4 minutes).
- Beat in eggs one at a time, mixing well after each. Then add vanilla extract.
- Gradually add flour mixture to wet ingredients, stirring until just combined.
- In a small bowl, mix together cinnamon and brown sugar for the filling.
- Divide dough in half, shape each half into a rectangle on floured surface, then sprinkle cinnamon-sugar mixture over rectangles and roll them into logs. Slice logs into ½-inch thick rounds.
Baking
- Place cookie rounds on lined baking sheet and bake for 10 to 12 minutes until edges are lightly golden.
- Allow cookies to cool slightly on baking sheet before transferring to a wire rack.
