  • 1 tbsp cinnamon For the filling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large mixing bowl, beat together room temperature butter, brown sugar, and granulated sugar until creamy and fluffy (about 3 to 4 minutes).
  4. Beat in eggs one at a time, mixing well after each. Then add vanilla extract.
  5. Gradually add flour mixture to wet ingredients, stirring until just combined.
  6. In a small bowl, mix together cinnamon and brown sugar for the filling.
  7. Divide dough in half, shape each half into a rectangle on floured surface, then sprinkle cinnamon-sugar mixture over rectangles and roll them into logs. Slice logs into ½-inch thick rounds.
Baking
  1. Place cookie rounds on lined baking sheet and bake for 10 to 12 minutes until edges are lightly golden.
  2. Allow cookies to cool slightly on baking sheet before transferring to a wire rack.
