  • 1 cinnamon stick 1 cinnamon stick or 1/2 teaspoon ground cinnamon A stick gives a milder infusion while ground cinnamon yields a stronger flavor.
  • 1 cup 1 cup (240 ml) hot water Hot water is needed to extract cinnamon oils and flavor.
  • 1/2 lemon Juice of 1/2 lemon (optional) Adds brightness and acidity to balance the spice.
  • 1 teaspoon 1 teaspoon honey or a few drops of stevia (optional) Sweeten to taste.
  • Ice (if preferred cold) Use to chill the drink quickly for a refreshing cold version.

Preparation
  1. Boil the water and remove from heat. Use fresh water brought to a rolling boil for the cleanest flavor.
  2. Add the cinnamon stick or ground cinnamon into the hot water and stir.
  3. Let it steep for 8 to 12 minutes. Steep toward the lower end for a gentle flavor, or toward the higher end for a stronger infusion.
  4. Strain if using ground cinnamon, or remove the stick.
  5. Serve warm or refrigerate and pour over ice. Add lemon or honey to taste if desired.

Notes

For a milder cup, use a cinnamon stick and steep for 8 minutes. For a bolder flavor, use ground cinnamon. Refrigerate leftovers for up to 3 days, stirring before serving. Freezing is not advised as flavor may diminish.
