Preparation
- Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper.
- In a large bowl, mix together flour, oats, shredded coconut, brown sugar, and baking powder until well combined.
- In another bowl, whisk together melted butter, egg, and vanilla extract, then add this to the dry mixture and stir until just combined.
- Spread half of the coconut mixture into the greased baking dish evenly and press it firmly to form a solid base.
- Spread an even layer of your chosen fruit jam over the pressed coconut base.
- Top with the remaining coconut mixture, sprinkling evenly; don't worry if some jam peeks through.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and a toothpick inserted in the center comes out clean.
- Let the dish cool completely before cutting into squares.
