  • ½ cup brown sugar Coconut sugar can be used for a healthier option.
  • ½ teaspoon baking powder Provides lift for the bars.
Wet Ingredients
  • ½ cup unsalted butter (melted) Coconut oil can be used for a dairy-free version.
  • 1 large egg A flax egg can be used for a vegan option.
  • ½ teaspoon vanilla extract Adds aromatic flavor.
  • 1 cup fruit jam Choose your favorite flavor like raspberry, apricot, or strawberry.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish or line it with parchment paper.
  2. In a large bowl, mix together flour, oats, shredded coconut, brown sugar, and baking powder until well combined.
  3. In another bowl, whisk together melted butter, egg, and vanilla extract, then add this to the dry mixture and stir until just combined.
  4. Spread half of the coconut mixture into the greased baking dish evenly and press it firmly to form a solid base.
  5. Spread an even layer of your chosen fruit jam over the pressed coconut base.
  6. Top with the remaining coconut mixture, sprinkling evenly; don't worry if some jam peeks through.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the top is slightly golden and a toothpick inserted in the center comes out clean.
  2. Let the dish cool completely before cutting into squares.
