Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the ground beef, breaking it apart with a spatula until completely cooked. Drain any excess fat.
- Add the mixed vegetables to the skillet and stir them into the cooked meat. Cook until warmed through, about 5 minutes if using frozen veggies.
- Remove the skillet from heat. In a large mixing bowl, combine the meat and veggies with the cooked rice and cream of mushroom soup. Blend well until evenly coated.
- Pour the mixture into a greased 9x13-inch casserole dish, ensuring it’s spread evenly and compact slightly.
- Top with shredded cheese and bake for 30-35 minutes, or until the cheese is bubbly and golden.
- Allow to cool for 5-10 minutes before serving.
