  • 1 sleeve Ritz crackers, crushed Substitute with buttery or savory crackers if desired.
  • 1 cup shredded cheese Cheddar or mozzarella is recommended; experiment with varieties.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, cream of chicken soup, sour cream, and mixed vegetables. Gently stir until well incorporated.
  3. Spray a 9x13 inch baking dish with cooking spray and pour the chicken mixture into it, spreading it out evenly.
  4. Sprinkle the shredded cheese evenly over the chicken mixture.
  5. Crush the Ritz crackers and distribute over the cheese layer.
Baking
  1. Place the baking dish in the oven and bake for 30-40 minutes, until bubbly and golden brown.
  2. Let the casserole rest for 5-10 minutes before serving.
