- Pat the chicken thighs dry with paper towels and place them in a large bowl.
- In a small bowl, mix olive oil, smoked paprika, cumin, chipotle powder, garlic powder, salt, and pepper.
- Rub the spice mixture under and over the skin of the chicken. Let sit for 15–30 minutes.
- Preheat air fryer to 400°F (200°C) for 5 minutes.
- Place chicken thighs skin-side up in the air fryer basket. Cook for 25–30 minutes, flipping halfway, until golden and internal temp hits 165°F (75°C).
- Let rest for 5 minutes before serving. Garnish with fresh cilantro.
