  3. Pour the egg mixture into the skillet with the cooked sausage. Stir gently and cook on medium-low until the eggs are just set but still creamy—about 3-5 minutes.
  4. When the eggs are nearly done, sprinkle the cheese on top and remove the skillet from heat. Let it sit covered for 1 minute to allow the cheese to melt.
Assembly
  1. Lay each tortilla flat, add an appropriate amount of the sausage and egg mixture in the center, then roll it tightly, tucking in the sides for a secure wrap.
  2. If desired, return the roll-ups to the skillet for an additional 2-3 minutes on each side until golden brown.
