Ingredients
  

Gelatin Base
  • 1 to 2 tablespoons unflavored gelatin powder Use 1 tablespoon for a looser set, 2 tablespoons for a firmer gelatin.
  • 1 cup cold water Used to bloom the gelatin.
  • 1 cup hot water Used to dissolve bloomed gelatin.
Flavorings
  • 1 to 2 tablespoons lemon or lime juice Adjust to taste.
  • to taste low-calorie sweetener or honey Low-calorie sweetener keeps it low in calories, honey adds natural sweetness.
  • optional fruit puree or sugar-free drink mix For extra flavor and color.

Method
 

Bloom the gelatin
  1. Sprinkle the gelatin powder evenly over cold water in a small bowl. Let sit for 3 to 5 minutes.
Heat the liquid
  1. Bring hot water to a gentle boil, then remove from heat.
Dissolve the gelatin
  1. Pour hot water over bloomed gelatin and stir until completely dissolved.
Add sweetener and flavorings
  1. Stir in lemon or lime juice and sweetener or honey. If using puree or drink mix, fold it in now.
Chill to set
  1. Pour the mixture into molds or a shallow dish. Refrigerate for 2 to 3 hours until firm.
Serve
  1. Cut into portions and serve chilled. Store leftovers in the refrigerator for up to 4 to 5 days.
