  • 2 tablespoons unflavored gelatin powder or powdered collagen Provides gelling power and a protein boost.
  • 1/2 cup cold water Used to bloom the gelatin.
  • 1 cup warm water Helps to dissolve the gelatin.
  • 1 cup cold juice or cold water Adds flavor and body.
  • to taste low-calorie sweetener or honey Keeps calories low or adds natural sweetness.
  • optional natural flavor extract or mashed berries Deepens flavor and aroma.
  • a small pinch powdered vitamin C or citric acid Brightens flavor and helps preserve color.

Method
 

Preparation
  1. Bloom the gelatin by sprinkling 2 tablespoons of unflavored gelatin powder evenly over 1/2 cup cold water in a small bowl and let it bloom for 3 to 5 minutes.
  2. Warm 1 cup of warm water in a saucepan together with your chosen sweetener or honey until steaming but not boiling.
  3. Pour the bloomed gelatin into the warm liquid and stir until completely dissolved and smooth.
  4. Remove from heat, then stir in 1 cup cold juice or cold water along with any optional flavors.
  5. Pour the mixture into molds or a shallow dish and refrigerate for 2 to 4 hours, until fully set.
  6. To serve, unmold if using molds, or cut into cubes and serve cool.

Notes
