Preparation
- Bloom the gelatin by sprinkling 2 tablespoons of unflavored gelatin powder evenly over 1/2 cup cold water in a small bowl and let it bloom for 3 to 5 minutes.
- Warm 1 cup of warm water in a saucepan together with your chosen sweetener or honey until steaming but not boiling.
- Pour the bloomed gelatin into the warm liquid and stir until completely dissolved and smooth.
- Remove from heat, then stir in 1 cup cold juice or cold water along with any optional flavors.
- Pour the mixture into molds or a shallow dish and refrigerate for 2 to 4 hours, until fully set.
- To serve, unmold if using molds, or cut into cubes and serve cool.

Notes
Store in an airtight container in the refrigerator for up to 4 days. For freezing, lay gelatin cubes on a tray, then transfer to a sealed container for up to 1 month.
