Method
- Mix flour and salt in a bowl. Cut in cold butter until coarse crumbs form. Gradually add ice water to form dough. Wrap and chill 30 minutes.
- Pat shrimp dry and chop into bite-sized pieces.
- Sauté onion, pepper, celery in butter until soft. Add garlic and cook 1 minute.
- Stir in shrimp, cook 2–3 minutes until just pink. Season with Old Bay, cayenne, salt, and pepper. Remove from heat.
- Let cool slightly. Mix in cream, eggs, cheddar, Parmesan, parsley, lemon juice.
- Preheat oven to 375°F. Roll out dough to fit 9-inch pie plate. Pour in filling.
- Bake 30–35 minutes until crust is golden and filling is set. Rest 10 minutes before slicing.

Use Gulf shrimp if Florida shrimp are unavailable. Sub half-and-half or dairy-free alternatives as needed. Chill all crust ingredients for flakier dough. Let pie rest before cutting for cleaner slices.
