Ingredients
  

  • cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup cold unsalted butter cubed
  • 4-5 tablespoons ice water
  • 1 pound fresh Florida shrimp peeled and chopped
  • 3 tablespoons butter
  • 1 medium onion diced
  • 1 red bell pepper chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • ¼ cup fresh parsley chopped
  • 2 teaspoons Old Bay seasoning
  • ½ teaspoon cayenne pepper
  • ½ cup heavy cream
  • 2 large eggs beaten
  • 1 cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Method
 

  1. Mix flour and salt in a bowl. Cut in cold butter until coarse crumbs form. Gradually add ice water to form dough. Wrap and chill 30 minutes.
  2. Pat shrimp dry and chop into bite-sized pieces.
  3. Sauté onion, pepper, celery in butter until soft. Add garlic and cook 1 minute.
  4. Stir in shrimp, cook 2–3 minutes until just pink. Season with Old Bay, cayenne, salt, and pepper. Remove from heat.
  5. Let cool slightly. Mix in cream, eggs, cheddar, Parmesan, parsley, lemon juice.
  6. Preheat oven to 375°F. Roll out dough to fit 9-inch pie plate. Pour in filling.
  7. Bake 30–35 minutes until crust is golden and filling is set. Rest 10 minutes before slicing.

Notes
