  • 2 large eggs Can substitute with flax eggs for a healthier version.
  • 1 tsp vanilla extract Adds an extra layer of flavor.
  • 1/2 tsp salt Balances the flavors and enhances sweetness.
  • 1/2 tsp cinnamon The classic churro flavor.
  • 1/2 cup extra cinnamon and sugar For coating the churro bites.

Method
 

Preparation
  1. In a medium saucepan, combine the water, butter, sugar, and salt. Heat over medium until the mixture boils, then remove it from the heat.
  2. Add the flour all at once, stirring quickly with a wooden spoon until a dough forms and pulls away from the sides of the pan. The dough should be smooth and should not stick to your fingers.
  3. Let the dough cool for about five minutes, then add the eggs one at a time. Stir vigorously after each egg until fully integrated. The dough should become glossy.
  4. Fold in the cinnamon and vanilla extract until everything is well combined. Your dough should be thick yet pliable.
  5. Using a piping bag or a clean plastic bag with a corner snipped off, pipe small bite-sized circles (about 1 inch in diameter) onto a piece of parchment paper.
Cooking
  1. Set your air fryer to 375°F (190°C) and preheat for about 3-5 minutes.
  2. Once preheated, carefully place the churro bites into the air fryer basket in a single layer, making sure they don’t touch each other. Air fry for 8-10 minutes or until they are golden brown and puffed up.
